Nose

Heather honey, aromatic peat smoke, dried orange peel. A gentle maritime salinity beneath layers of sweet malt and beeswax.

Palate

Round and full. Sweet heathery smoke interweaves with dark chocolate, winter spices, and a hint of sherry-soaked fruitcake. Beautifully balanced.

Finish

Long, warm, smoky-sweet. Lingering heather and gentle oak spice. The Orcadian character persists with quiet elegance.

Observation

The Highland Park exhibits a rare equilibrium between sweetness and smoke—a quality born of Orkney’s unique hand-turned peat and the distillery’s devotion to floor-malting traditions stretching back to 1798.

Bunnahabhain

Organoleptic Observations

Nose

Fresh sea air, salted caramel, roasted nuts. A lighter, more delicate opening than its Islay neighbours, with dried fruit and vanilla undertones.

Palate

Gentle and malty with a nutty sweetness. Honeyed cereal, dried apricot, and subtle maritime minerality. Surprisingly unpeated for an Islay malt.

Finish

Medium length, clean and fresh. A whisper of sea salt and toasted oak. Finishes with a gentle, warming nuttiness.

Observation

Bunnahabhain confounds expectations. Positioned at the northernmost point of Islay, drawing from the Margadale spring, it produces an unpeated spirit of remarkable gentleness—a quiet rebellion against Islay’s smoky reputation.

Glengoyne

Organoleptic Observations

Nose

Green apples, toffee, vanilla custard. Clean, bright, and inviting with hints of cinnamon and nutmeg. No peat whatsoever.

Palate

Lusciously sweet. Baked apples, butterscotch, creamy malt. The slowest distillation in Scotland yields an exceptionally smooth and fruity spirit.

Finish

Medium, gently drying. Orchard fruits give way to warm oak and a trace of ginger. Approachable yet deeply satisfying.

Observation

Glengoyne occupies a unique position: distilled just north of the Highland Line, warehoused just south of it. Air-dried barley and Scotland’s slowest stills produce a spirit of extraordinary purity and fruit-forward character.
